It’s Sunday and I always like to make something special for breakfast, once a week, on this traditional day of rest. This week, I’m going to make my own Egg, Sausage and Cheese Breakfast Sandwich. And there’s one secret that will make it extra special and totally pro-looking…

Stack it any way you like. Use any Meat you like! Just do it!

The ‘secret’ is the stainless steel cooking ring you use to form the Sausage Patties and Cook the Eggs! (See the note under What you do…)

What you need….

4 Large Eggs
5 large Italian Sausages (at least 1 lb. / 454 g total)
4 slices Cheddar Cheese
4 pats Butter
Canola Oil
Salt and Pepper
4 Buns – English Muffin, Hamburger or whatever you like

Special Equipment:
1 set of stainless Steel cooking rings (2 in. / 5 cm to 5 in. / 12.5 cm diameter)

What you do…

If you don’t already have a set of cooking rings, get one. They’re available at any decent restaurant supply store for under $10. They make so many plain dishes look restaurant-quality!

We’re making our own patties from commercially-made Sausages. You can mix up your own Sausage meat from ground Beef and Pork plus the Spice Blend of your choice, but store-bought sausages are easier and may even be cheaper! I use ‘Mild Italian’ Sausages and spice them to suit my taste…

Preheat a flat-bottomed frying pan on the stove top on medium high.

Preheat your oven to 375 F.

Remove the Sausages from their casings and, in a large mixing bowl, blend in Herbs and Spices of your Choice plus Salt and Pepper to taste. Add an Egg if you wish your patties to hold together more firmly.

Mix well with your hands to ensure  all ingredients are equally distributed.

Divide your meat mixture into four equal parts.

On a sheet of parchment paper, place a cooking ring slightly larger than your bun.

Press 1/4 of the Meat mixture into the ring forming a perfectly round patty of equal thickness all over. Repeat three more times.

Place the Patties, on their parchment paper, on a cookie sheet or Pizza pan and place the pan in the oven for 10-15 minutes.

Select a cooking ring the same size as your Buns and oil it well with Canola.

In the frying pan, place 2 tbsp. / 30 ml of Canola Oil and brush evenly around the bottom surface.

Place the ring in the centre of the pan and crack an Egg into it. Break the yolk if you like. Add Salt and Pepper to taste.

Cover the Egg ring with a small pot lid to encourage the top surface of the Egg to set.

After about 30 seconds, flip the Egg, ring and all, and the ring should come loose. Use tongs to remove it from the pan.

Remove the egg from the pan after another 10-15 seconds and set aside. Repeat three more times.

Assemble the Sandwich starting with bottom Bun, of course. I prefer the following order of ingredients: Sausage Patty, then Cheese and then Egg and, finally, the top bun. Repeat three more times.

Microwave the Sandwiches together on a plate for 30-60 seconds to re-warm them and melt the Cheese.

Dig in!

You can refrigerate these for a few days tightly wrapped in plastic or freeze them for a month or more in zip bags. Just microwave to re-heat and enjoy! Make lots…
