Queen’s Favourite Christmas Pudding Recipe Shared!

I’ve had this Very Special Recipe (VSR) knocking around my desktop for a few days, now, and the time has come to share it. You’ll recall that we shared the Queen’s favourite Birthday Care recipe with you a few years back, just in time for her birthday. Now we have her fave Christmas Pudding!

Everyone in the house must give the Pud a stir to ensure good luck…

Try this special Christmas Pudding with a Brandy Flambé or a Dusting of Powdered Sugar, and see how simple something this special can be!

What you need

The following ingredients make 2 x 1 kg puddings:

250g raisins
250g currants
185g sultanas
150g mixed peel 250g suet or vegetarian suet
250g breadcrumbs 90g flour
12g mixed spice
2 whole eggs
180g demerara sugar
275ml beer
40ml dark rum
40ml brandy

What you do

Combine the dry ingredients in a large mixing bowl.

Whisk together the eggs and the other liquids combining well in a second bowl.

Add the wet ingredients to the dry and mix well, being sure to make sure all dry stuff is coated with wet stuff.

Divide equally into two well-greased smaller bowls or small loaf pans (Pyrex). Small Loaves can be cut into equal portions more easily than a bowl-shaped pudding.

Steam them in a deep pot for six hours. A covered roasting pan with water in the bottom works well.

Once they’ve cooled down and finished, you can store them in a cool, dark place until Christmas.

My take

This one takes a lot of stirring, so get the kids and other adults in on the work. Don’t use a stand mixer; the mixture is too stiff for the machines.

If there’s nothing else really special about your Christmas Feast this year, the Queen’s Pudding will certainly set it apart from the ordinary…
