The Missing Link: ‘Universal’ Pizza Sauce

We recently shared out favourite Quick Pizza Crust recipe in this space and, now, it’s time to follow up with our Quick Pizza Sauce. This stuff has many uses if you like to cook Italian and the basic recipe is intended to make just enough sauce for one meal. But you can multiply it up as big as you want!

I make my own Basic Tomato Sauce in big batches and freeze it in 1 qt. / 1 L zip bags. You can start with a small can of Crushed Tomatoes.This recipe makes enough sauce to generously cover one large Pizza Crust. You can simmer it down as much as you want to avoid having too much volume for your particular Pizza Crust…

What you need…

8-10 oz. / 125-150 ml Crushed Tomatoes or home made Tomato Sauce
1 good pinch Salt
1 good pinch Sugar
1 tsp. / 5 ml Oregano
1 tsp. / 5 ml Basil
1 tsp. / 5 ml Thyme
1 tsp. / 5 ml Balsamic Vinegar

Optional:
Rendered Bacon Fat, if you are crisping Bacon for your Pizza!
1 good pinch Black Pepper

What you do…

Place all the ingredients in a small sauce pan and bring to a boil.

Stir well to combine all ingredients evenly.

Reduce heat and simmer until the sauce reaches the thickness you want. There should be no watery ‘runoff’ when you place a spoonful on a plate.

Allow the sauce to cool before spreading on your Pizza Crust.

You can use this Marinara as a dipping Sauce as well as a Pizza Sauce. In fact, you can use it anywhere a Tomato Sauce is called for. It’s particularly great for Saucing 1 or 2 portions of Pasta for a quick Supper!
