Italian inspiration
As all of Giada’s culinary creations, the marinade is simple but effective – and deliciously different. No brown sugar, no mustard, no Worcestershire Sauce. No red wine. Certainly no Soy sauce. The 4-ingredient formula is actually more like a Greek lamb marinade, which focuses on lemony zing, gar-licy body and traditional herbs with oregano and thyme in the forefront.
What’s in it?
Just olive oil, lemon juice, salt and Tuscan Grill Herb Blend – a pre-loaded flavouring blend DeLaur-entis sells under her Giadzy label. Hut if you have dried garlic, rosemary, thyme, fennel, sage, and basil on hand, you can come pretty close to duplicating it.
And by making your own, you can personalize the flavour to suit your tastes. One key dimension here: you can control the salt and garlic content. And even substitute minced fresh garlic for the flaked, dried stuff from the bottle. Fresh garlic lifts the flavour to a whole new level.

Boneless chicken breasts or thighs should marinate in this mixture for 1 to 2 hours. Bone-in cuts can take longer to assimilate the flavours.
My take
I love fast, simple, but effective cooking techniques and recipes. Giada’s chicken marinade checks all my boxes. And I’m already planning to try it on grilled cauliflower and cabbage ‘steaks’…
