A little history…

Aubourg tells us that nobody really knows why this dish is named after the King Ranch. But she is sure it emerged as a classic in the 1950s and won a newspaper recipe contest in 1972, ‘cementing its popularity’.

“King Ranch Chicken Casserole also draws inspiration from chilaquiles, a Mexican dish that combines fried corn tortillas with flavorful salsas and toppings like cheese, crema, and eggs,” she explains. “The casserole takes a different approach by using pantry staples and making shredded chicken the cent-erpiece of the meal.”

That you need…

The recipe remains little changed from its 1970s contest-winning form. It’s not a ‘certified’ 5-Minute Supper, but it’s is totally worthy of the ‘Ultimate Cheat’ label. King Ranch Casserole requires a little fuss and a few ingredients you may have to put on your next shopping list, but it’s definitely worth it!

The formula calls for onions and bell pepper, canned cream of chicken and cream of mushroom soup, sour cream, chicken, cheese and tortillas.

“This King Ranch Chicken Casserole is the ultimate comfort food. Beneath its melty layer of cheese lies a creamy, flavor-packed filling loaded with tender chicken, vegetables, and warm spices. I serve mine with crunchy tortilla chips for scooping, and the crisp texture paired nicely with the rich cas-serole. While this recipe easily stands on its own, there are plenty of ways to customize it.

    • Swap the tortillas. The tortillas soften as the casserole bakes, creating its signature thick, creamy texture. For a fun twist, replace them with frozen tater tots. They’ll add hearty bites of seasoned potatoes throughout the casserole.
    • Try a different protein. Chicken isn’t the only option for this comforting casserole. Swap in spicy chorizo, browned ground beef, or crispy bacon for a new take on the classic recipe.
    • Turn up the heat. If you like a little spice, stir in your favorite hot sauce or salsa macha before baking. You can also finish the casserole with sliced fresh jalapeños for an extra kick and a pop of freshness.

My take

Aubourg’s suggestions for updating and customizing this dish are great… But you’ll quickly find ad-ditional ways to make it even more ‘your own’. Bet you and yours will want to add this to your regular favourite-supper rotation!
