Here’s another hearty, easy family favourite that’s as easy as putting the ingredients in the Slow Cooker and turning it on. Many Italian classics are particularly well-suited to the Slow Cooker and this is just the fist of several we’ll present here, because we know everybody loves Italian!
Chicken Cacciatore over Linguini. Yum! One of my Italian faves…
Cacciatore is one of my fave Italian dishes. You can serve it over any kind of Pasta you like or Rice, if that’s your choice. And my Slow Cooker version will give you tender, juicy Chicken every time!
What you need…
2 lb. / 1 kg Chicken, Breasts or Thighs, skinless
2 medium Onions, sliced
1 cup White Mushrooms, sliced
1/2 cup / 125 ml Green Sweet Pepper, diced
1/2 cup / 125 ml Red Sweet Pepper, diced
3-4 cloves Garlic, minced or pressed
2 tsp. / 5 ml Oregano
1 tsp. / 5 ml Basil
1 tsp. / 5 ml Ground Fennel
1 tsp. / 5 ml Salt
1 1/2 cups / 725 ml Crushed Tomatoes
1/2 cup / 125 ml Dry White Wine
2 tbsp. / 30 ml olive oil
1 good pinch Red Pepper Flakes (or more, if you like ithotter)
What you do…
Place the sliced Onions in a layer in the bottom of the Cooker.
Place the Chicken pieces in a large bowl and toss with the other ingredients until all ingredients are combined and the chicken is thoroughly coated.
Place the Chicken Pieces on top of the Onions in the Slow Cooker and cover with the remaining Tomato/ingredients mixture over top of them.
Cook covered on low for 8 hours or on high for 4 hours.
Serve on your choice of Pasta or Rice. Garnish with Parsley if desired.
