COVID-19 Lock Down Cooking Fun: Chipotle’s Guacamole!

More restaurants are revealing the recipes for their customers’ favourite menu items so we can all make them at home during the COVID-19 lock down and ‘keep in touch’. Last week we gave you IKEA’s Swedish Meatball recipe. Today, we present Chipotle’s beloved Guacamole Dip…

I think we all remember the catastrophic issues Chipotle’s suffered through last year and the year before, when a string of food poisoning outbreaks smeared its name across the media. Then, earlier this year, the chain was fined (US)$1.3 million in connection with 13,253 child labor violations in more than 50 Massachusetts locations. The state charged that the chain had kids under the age of 18 working later than midnight and more than 48 hours a week, both infractions of state labour laws. It was the biggest child labour penalty ever issued by the state.

But the chain got itself a new CEO, Brian Niccol, who vowed to make things right again. Niccol is what folks of my generation call a ‘licensed troubleshooter’, a guy who comes in when things look bleak and turns a restaurant chain around. He came to Chipotle’s in the fall of 2018 after giving Taco Bell – a failing, unloved brand in the mid 20-teens – a dynamic new face.

Niccol was particularly positive about Chipotle’s new commitment to food safety: “What we definitely are committed to doing is real ingredients, truly fresh, and that does require different food safety standards to be in place.”

Jumping on the bandwagon

Following the lead of a number of other resto brands, Chioptle’s has revealed the recipe for its famous Guacamole Dip so fans stuck at home can enjoy a taste of the Chipotle’s experience. This is a great recipe to get the kids involved in, mashing the Avocado and stirring in the other ingredients! And it’s quick enough that they won’t get bored…

What you need

2 ripe Hass Avocados
2 tsp. / 10 ml Lime Juice
2 tbsp. / 30 ml Cilantro (chopped)
1/4 cup / 60 ml Red Onion (diced)
1/2 Jalapeño including Seeds (diced)
1/4 tsp. / 1.25 ml – ‘a good pinch’ – Salt

What you do

Remove the Avocado pits, scoop the Flesh from the skins, and mash with a fork. Alternately (and this works best if you are scaling the recipe up to a greater volume – which I recommend; you’ll want lots!) you can whiz the Avocado Flesh in a food processor. Just pulse it a few times until you get the texture you want. Chipotle’s serves it ‘slightly chunky’ style.

Blend with the other ingredients in a mixing bowl until just nicely combined.

Serve immediately, or cover tightly with plastic wrap, placing the plastic in direct contact with the surface of the dip to avoid oxidation. Avocado lovers all know that Guacamole turns brown quickly with exposure to air. I like to add a little more Lime Juice over the top of the Dip under the plastic to enhance the anti-oxidant effect.

Pop open a big bag of ‘Restaurant Style’ Corn Chips and lose yourself for a couple of hours in a great movie… (My idea!)

If you’re not inclined to make your own Chipotle’s Guacamole, or you don’t want to risk a trip to the supermarket just for Avacados, you can order for takeout or delivery during the COVID-19 lock down. Visit the Chipotle’s website, choose the kind of food you want, then enter your city name to find your nearest restaurant. Delivery on orders over $10 is free until the end of this month. You can get almost everything on Chipotle’s regular menu, including build-your-own Burritos. When you order a burrito, mark it ‘4HEROS’, and Chipotle’s will donate a Burrito to a local health care worker (for a limited time).
