COVID-19 Lock Down Cooking Fun: Rice Krispies Treats!

Today, I present a perfect recipe to ease the uninitiated into the cult of baking: Kellogg’s Original Rice Krispie Treats! It requires only three ingredients and takes hardly any time at all. And, along the same lines, we also have a quirky, quick-mix OREO’s Mug Cake that uses only two ingredients!

to make a glamorous individual dessert.

First, the OREO’s Mug Cake

I doesn’t get any easier than this:

Place 6-8 OREO Cookies (flavour of your choice).

Fill the mug half way with Milk (whole Milk works best).

With a Fork, break up the Cookies and blend with the Milk until you get a smooth, Batter-like consistancy.

Microwave the mug for 1 – 2 minutes (depending on its size and the amount of Batter mixture), checking with a toothpick for doneness after 1 minute.

Remove from the Mic and dig in with a spoon.

Alternate Method:

Spray the mug with Cooking Spray or grease it generously like you would a regular Cake pan.

Mash up the Cookies and Milk in another m and pour into the greased Mug. Be sure to scrape out all the Batter into the greased mug with a spoon or small spatula.

After removing from the Mic, allow to cool, until the cake pulls away from the sides of the mug.

Tip out onto a luncheon Plate.

Top with your choice of Frosting, Glaze or Whipped Cream.

It’s as easy as that!

Now, the Rice Krispies Treats

Ah! Echoes of my childhood… When I was little, every Mom knew how to make these crunchy, gooey, no-bake squares – and just about every home had a box of Rice Krispies in the pantry. Once you have the technique down pat, you can explore the wild world of toppings and inclusions!

Here’s the original recipe from Kellogg’s website, where you’ll find additional tips…

Grease generously a 9 in. x 13 in. / 22.5 cm x 32.5 cm baking dish. (Mom always used a Pyrex Lasagna dish. So do I.)

In a large sauce pan melt 3 tbsp. / 45 ml Butter together with 1 x 10 oz. / 285 g bag of regular sized Marshmallows OR  4 cups / 1 L of Miniature Marshmallows. Use low heat and stir constantly to avoid burning.

In a large mixing bowl measure out 6 cups / 1.5 L of Rice Krispies Cereal. (Special K also works, as to other puffed cereals.)

Add the hot  – molten! – Marshmallow to the Cereal and mix together with a greased spatula or wooden spoon until all the Cereal puffs are coated.

Press the Cereal mixture into the greased baking dish with a greased spatula.

Allow to cool to room temperature.

Cut into squares with a well-greased knife and serve.

Tip: Double the recipe! These things disappear in the wink of an eye…

Optional:

You can stir in Chocolate or Caramel chips, or any other inclusion that strikes your fancy when blending the Marshmallow with the cereal.

You can reduce the amount of Cereal by 1/2 to 3/4 cup / 125 to 185 ml for a gooier, stretchier texture.

And there you have it…

Two easy dessert or snacking treats that a couldn’t be easier or quicker to make! The fancier (tipped-out) presentation of the Mug Cake makes a great supper desert, and the Rice Krispies Treats provide a welcome alternative to same-old Popcorn for movie night munching…
