The Simplest, Fastest Casserole Ever!

I’ve extolled the virtues of Breakfast Bake casseroles in this space before. I just love ’em and they’re the hands-down best way to feed a holiday brunch crowd. But I also love Breakfast-for-Lunch-or-Supper and I’ve just come across this recipe for what might be the ultimate any-meal Bake!

Your average Breakfast Bake has Bread Cubes, Beaten Eggs, Milk, Cheese and whatever additions you want to make – often Onions, Ham or Bacon, and Sweet or Hot Peppers. But the ‘recipe’ I’m going to give you today streamlines the prep to an absolute minimum and results in a great anytime one-dish meal.

What you need…

6 Large Eggs
1/2 cup / 125 ml Cream or Condensed Milk
1 1/2 cups / 375 ml grated Cheddar Cheese
8 Frozen Sliders or Breakfast Sandwiches, thawed
Salt and Pepper to taste

You can get frozen breakfast Sandwiches and Slider Burgers at most supermarkets, now-a-days. You’re meant to microwave them, but I’ve got other ideas…

What you do…

Pre-heat your oven to 400 F.

Cut the Sliders/Sandwiches into 3/4 in. / 2 cm cubes. Place in an even layer in a well-greased shallow baking dish.

Beat together the Eggs, Cream, Salt and Pepper. Fold in the Cheese. Add a good big pinch of grated Nutmeg if you wish.

Pour the Egg Mixture over the Slider/Sandwich cubes and stir to ensure that some of the Egg mixture is absorbed by every Cube of Sandwich/Slider.

Optional: Sprinkle more grated Cheddar on top of the casserole. Top with Chopped Scallions.

Bake at 400 F for 35-40 minutes, until the Cheese on top starts to bubble and turn brown and the Egg is fully set.

And that’s all there is to it…

Feeds up to 8 diners. Serve alongside a fruit salad or a selection of Fresh Fruit. I don’t know anyone (short of a vegetarian) who won’t love this great, easy anytime casserole! And don’t forget to have a big bottle of Ketchup on the table. Some folks like their eggs that way!
